So we resolved this by switching away from Cloudflare handling our DNS to revert it back to our domain service provider (Namecheap). This made our site available again. Now we've switched it back to Cloudflare and still looks up. So something in changing it seems to have jiggled some bits somewhere. / turn it on and off again / I guess

Yup, appears to be an turn off turn on fix. Very frustrating though for such a critical piece of infrastructure
